This is a fast and simple recipe. It is cool and refreshing and makes an excellent summer side dish! Growing up cucumber salad was a summer staple in my house. It even had its own Tupperware! Every week my mom would make a big fresh batch of cucumber salad to keep in the refrigerator. It was a great way to use up all those cucumbers that we grew in our garden and we’d have it as an addition to almost every dinner. We even made sandwiches out of it! I have fond memories of sitting at the kitchen table with my dad, spreading a thin layer of mayonnaise on toast and piling on cucumber and onion salad to make cool cucumber sandwiches. To me, nothing quite tastes like summer more than cool cucumber salad!
Hungarian Cucumber Salad
Equipment
- large container or bowl
Ingredients
- 4 cucumbers
- 1 small onion
- 3 cloves of garlic peeled and crushed
- 2 tbsp fresh dill
- 6 cups water
- 1/3 cup sugar
- 2 cups white vinegar
Instructions
- Peel and slice your cucumbers so that they are about 1/4" thick and place them in the container.
- Cut the onion in half and thinly slice it. Add the slices to the container with the cucumbers.
- Peel and crush 3 garlic cloves and add to the container.
- Rinse and roughly chop the dill and add to the container.
- In another bowl or a large liquid measuring cup add 2 cups of white vinegar. Add 1/3 cup sugar directly to the vinegar and stir to dissolve. Dilute the mixture with 6 cups of water and pour over the vegetables in the container.
- Move the container to the refrigerator and let it soak for several hours before serving. The salad can be stored in the refrigerator for several days and enjoyed.
Notes
Cucumber Sandwiches
I grew up eating cucumber salad sandwiches with my father all summer long. To make these sandwiches just put a thin layer of mayonnaise on two pieces of toast, pile on the the salad on one of the slices of toast, sprinkle on some salt and black pepper, top your sandwich and eat immediately. You have to eat it fairly quickly after making it or else your toast will get soggy.
